You met sesame on a bagel. Maybe in a scoop of grey-purple ice cream, or a spoonful of tahini. You filed it under garnish — a nice little accent, a bit of crunch.
Follow that same seed out of the kitchen and it turns up in rooms you would never expect: inside a syringe, inside a can of bug spray, worked into a piece of leather, and sold by the drum as a natural food dye. One of the oldest crops humans farm is also one of the most quietly useful things on Earth — and almost nobody talks about the other jobs it holds down.
Here’s the secret industrial life of sesame. It ends somewhere surprising: in the coat the seed refuses to take off.

First, the scale — this is a bigger crop than you think
Sesame is the oldest oilseed crop we know of, and it’s earned the old nickname queen of oilseeds honestly: the seed is roughly half oil by weight. It’s also stubbornly tough — drought-hardy, able to grow on marginal land where other crops give up.

The numbers back up the reputation. According to the UN’s FAOSTAT data, the world grew about 6.7 million tonnes of sesame in 2022 — up around 18% on a decade earlier, and part of a steady climb from under 1.5 million tonnes back in 1961. Production is strikingly concentrated: Sudan is the single largest producer at roughly 1.2 million tonnes (about 18% of the world’s supply), followed by India and Myanmar; the top three countries account for around 41% of global output, and the top ten for about three-quarters of it. Africa, led by Sudan, Nigeria, and Tanzania, has become the leading producing region, and most of that crop is grown rain-fed by smallholder farmers — which is exactly why sesame prices swing with weather and regional instability.
Put a dollar figure on it and things get fuzzier: market-research firms estimate the global sesame trade somewhere in the range of roughly $7–11 billion a year, though those are private estimates and they vary by firm and method, so treat the band, not the point. The tonnage is the solid number. The point is simple: this “garnish” is a multi-billion-dollar, multi-continent commodity — and that’s before it does any of its stranger jobs.
Medicine: the oil that carries the drug
Here’s the one that stops people. Highly refined, pharmaceutical-grade sesame oil — the kind that meets US and European Pharmacopoeia standards — is used as the oily vehicle inside certain injectable medications.
The trick is called a depot formulation: dissolve a drug that doesn’t like water into an oil, inject it into muscle, and the body releases it slowly over days or weeks instead of all at once. Sesame oil is a workhorse for exactly this. Testosterone enanthate, used in hormone therapy, is dissolved in sesame oil and injected roughly every two weeks. Haloperidol decanoate — a long-acting antipsychotic — is solubilized in sesame oil and released over about three weeks per shot, which is what lets a patient go a month between doses. Progesterone and other hormones use it too.
Why sesame, of all oils? Because of the same lignans — sesamin and sesamolin — that the folklore always circled around. They make sesame oil unusually resistant to going rancid, which is exactly the stability you need in a vial that has to sit stable for a long time. The compounds your grandmother trusted are the compounds a pharmacist trusts, for the very same reason.
Pest control: the molecule hiding in your bug spray
Now the strangest lineage of all. In 1940, sesame oil was found to make natural pyrethrin insecticides dramatically more powerful against the common housefly — not by killing insects itself, but by disabling the enzymes insects use to break the poison down. Over the next fifteen years, chemists pinned the effect on two molecules: sesamin and sesamolin. The same lignans. Again.
That discovery had a long tail. The active part of those molecules — a chemical group called methylenedioxyphenyl — became the template for a synthetic version called piperonyl butoxide (PBO). PBO is now one of the most widely used insecticide synergists in the world, found in more than 2,500 pesticide products, from household foggers to head-lice treatments. So the seed’s chemistry is quietly hiding in your medicine cabinet a second time — not as the medicine, but as the reason the bug spray works.
Color: sold as a dye, black for the reason your hair is
Sesame isn’t just flavor. Black sesame is sold, literally, as a color. There’s a commercial ingredient — marketed as a black sesame pigment — that’s a dark-grey coloring foodstuff used in ice cream and chocolate. Beyond that, ground black sesame has become a natural, plant-based food colorant, especially in Korean and vegan bakeries turning out black cookies, macarons, breads, and lattes. It’s a clean-label stand-in for activated charcoal, which is actually restricted as a food color in the US and blocked in South Korea — so the seed fills a genuine regulatory gap.
The honest nuance is the interesting part: whole ground black sesame doesn’t give a true, saturated black. It reads grey, speckled, faintly purple — because you’re using the whole crushed seed, not an extracted pigment. That “not-quite-black, grey with a purple lean” is the exact look every trend piece can’t stop photographing.
And why is the seed dark at all? A 2022 study in Frontiers in Nutrition isolated the pigment from the sesame seed coat and identified it as melanin — the same class of pigment that colors hair and skin, and the same one behind the dark coats of black oat, watermelon seeds, and black garlic. Sit with that next to the oldest piece of sesame folklore — good for your hair, keeps it dark — and the rhyme is almost too neat: the seed is colored by the very pigment the folklore is about.
Leather: the oil that softens the hide
One more field, and it’s a fitting one for anyone who wears their materials. Sesame oil is used to soften leather.
After a hide is tanned, it has to be re-greased or it dries stiff and “starved.” Tanneries do this with a fatliquor — an oil-in-water emulsion worked into the fibers to make the leather supple, stable, and handsome. Researchers have made a sulfonated sesame-oil fatliquor and found it lubricates leather comparably to the commercial imported product, proposing it as a local substitute for tanneries in Nigeria. And this is ancient know-how: artifacts from Egyptian tombs show sesame oil used with gum-arabic bark and alum to process leather thousands of years ago — a method apparently known to the Romans, too.
So the same oil that ends up in the syringe and the bug spray has been making leather soft since the pharaohs.
The through-line: it’s all in the coat

Line those jobs up and something clicks. The melanin that makes the color. The lignans — sesamin and sesamolin — behind the drug stability, the insecticide power, and the antioxidant health claims. They don’t live scattered through the seed. They live in one place: the seed coat. The hull. The jacket.
White, hulled sesame — the pale kind polished for looks — has that coat stripped away. Black, unhulled sesame keeps it. Which means every hidden use in this piece traces back to the one part most of the world throws out.
There’s a small irony in the commodity market that makes the point sharper: white sesame generally fetches higher prices than dark-colored seed, on consumer preference and culinary habit. The trade quietly prices up the seed that discarded its coat, and prices down the one that kept it — the coat where the color, the medicine, and the chemistry actually live.
